Dr. Jeyam Subbiah, associate vice chancellor for research development at the University of Arkansas, experienced the issue firsthand during the COVID-19 pandemic. While shopping for chicken at a grocery store, he found empty shelves.
"I thought to myself, 'How is this possible here?'"
The shortage was partly due to laborers in the poultry production industry falling ill with COVID, significantly reducing output. Tyson Foods, the largest chicken producer in the country, is headquartered in Springdale, with many chickens coming from farms across the state.
