Lee Murdoch Named Executive Chef at Seaton House

Lee Murdoch has been appointed executive chef at Seaton House in St Andrews, where he will lead the kitchen and oversee the property’s dining operations. He steps into the role previously held by Mark Drummond, former culinary director at Hyatt’s Schloss Roxburghe.

Murdoch will collaborate with Roy Brett, the founding chef of Ondine Oyster & Grill at the hotel and the head of culinary for the UK and Europe at Valor Hospitality, the operator of the 42-bedroom Seaton House.

Before this appointment, Murdoch contributed to the launch of the Coal Shed, a 140-cover steakhouse in Brighton, in October 2024. Throughout his career, he has held senior culinary roles in the UK, Asia, and the Middle East, including at Trump Turnberry in Scotland.

Murdoch is a recipient of the Royal Academy of Culinary Arts Award for Excellence.

As executive chef, he will oversee Seaton House’s food and beverage outlets, including the Board Room, Bow Butts Bar, and Ondine Oyster & Grill.
